Asla Pet Nat

Made from white vinification of Ciliegiolo grapes, this wine surprises: delicate at first glance, yet intense in character. Its color is an elegant pink, with aromas of pink grapefruit, gentle spices, and a clear, vibrant minerality.

What makes it special? A gentle sparkle, achieved through the ancestral method, that brings a fresh, lively texture to Ciliegiolo. A subtle twist that makes Asla Pet-Nat truly one of a kind.

The grapes come from two vineyards in San Gemini: Colle Ozio and Colle Pizzuto, located between 230 and 290 meters above sea level. The clay-limestone soils and young vines (5–10 years old), trained using the guyot system, ensure freshness and aromatic precision. Yields are deliberately low: only 700–800 grams per vine.

Manual harvest in 20 kg crates, spontaneous fermentation for about 20 days, and aging on fine lees in stainless steel tanks for 6 months. After bottling, the wine rests in the cellar and undergoes a second fermentation without any added sugars or yeasts.
